Instant Pot Corn on the Cob is a treat and may become your go-to recipe for corn on the cob. When I discovered this recipe I was skeptical. I had done corn on the cob in my Instant Pot several times before. Always loved the fact that I could take a full bag of frozen corn on the cob, put it in the Instant Pot with minimal liquid, and have ready-to-eat corn on the cob in about 30 minutes. That is counting the time it takes for the pot to pressurize. However, this recipe has milk and butter and makes a delicious liquid treasure bath for your corn. So, don’t leave it behind let your corn set in this till the time you serve and you can spoon some over the top on your plate as well. Shoot, if you have a potato side that you would normally add butter to drizzle this liquid treasure over them also!!
Instant Pot Corn on the Cob
Ingredients
- 4-6 Ears of Corn on the Cob fresh or frozen (you will want to use half ears they fit the pot better)
- 1/2 cup Water (Do not add if using frozen corn.)
- 1 cup Milk, Half-n-half, or Heavy Whipping Cream
- 1 Tablespoon White Sugar
- 1/2 cup Butter (I prefer it softened)
- 1 teaspoon Sea Salt
Instructions
- Add water, cream or milk, sugar, and salt to Instant Pot and stir to help the sugar dissolve a little bit.
- Add the corn and the butter.
- Lock on the lid and close the Pressure Valve. Set the Instant Pot to high pressure for 3 minute.
- When time is up let it naturally release for 10 minutes and then release the rest of the pressure.
- The corn can sit in the liquid until ready to serve.
Note: If you are disturbed by the white floaties (milk fat) that has developed remove your corn to a plate and use a whisk to reincorporate the milk fat. If that doesn’t work as well as you would like you can strain your liquid but DO NOT throw it out. Return your corn to the pot and pour your liquid back over the top. If not consuming right away turn your keep warm function on and return the lid to the pot and leave it till ready to serve. The longer it sits in this liquid treasure the more flavorful your corn will be. Be sure to have this with a glass of Fine Wine.
Another use for the liquid treasure!
We have found that this corn liquid adds so much wonderful flavor to mashed potatoes! Substitute it for equal part of other liquids you would use. It is amazing when using in instant mashed potatoes!
- First, remove your corn right before serving.
- Second, start the sauté feature on your Instant Pot this is to make sure the liquid and your potatoes are hot.
- Third, when the liquid starts to bubble turn off your Instant Pot.
- Forth, add in the necessary amount of instant mashed potato flakes to make them the consistency you like.
- Lastly, if you add to many flakes just add a little more milk or water.
We all like our mashed potatoes different. Some like them thin and almost soup like. I personally like mine to be thick, buttery, and creamy with the ability to almost pick an empty plate up off the counter. But to each their own and love your potatoes the way you love them!
